- 1 tsp agar (or 5g gelatine powder or use gelatine strips, soak and follow instructions on packet)
- green tea powder (1 ½ tbsp. macha)
- 1/4 boiling water (and 1 ½ cups room temperature water)
- 4 tbsps caster sugar

Fruit Dessert japan

- 3 1/2fl oz water
- 4oz white sugar
- juice and zest of 2 limes
- 1/2 pineapple, cut into 2.5cm (1in) chunks
- 2 bananas, cut into 4cm (1 1/2in) pieces
- 3 kiwi fruit, peeled and quartered
- 4 bamboo skewers, soaked in cold water for 2 hours
instructions
put the water, half the sugar, the lime juice and zest in a small pan
bring to the boil, lower the heat and simmer gently for 10-15 minutes or until thick and syrupy
thread the fruit on to the skewers
scatter over the remaining sugar evenly
heat a griddle or grill and cook until the fruit is golden and slightly charred, turning occasionally
drizzle with the lime syrup
